Ingredients:
- 2 lb. goat meat, cut into cubes
- 2 potatoes, cubed
- 2 carrots, cubed
- 4 bell pepper, cubed
- 1 cup whole button mushrooms
- 1 cup pineapple tidbits
- 2/3 cup of green peas
- 2 garlic cloves, minced
- 1 onion, diced
- 4 cups tomato sauce
- ½ cup soy sauce
- 2 cups chicken stock
- 2 cups water
- 1 tsp salt
- 1 tbsp pepper
- 3 tbsp olive oil
Directions:
- Heat the oil in your large pan over medium heat and sauté the garlic and onions until fragrant.
- Add the goat meat cubes and brown for about 2 minutes. Pour the water, season with salt and pepper, and let it boil. Adjust the heat to low and simmer for 1 to 2 hours until the meat is tender.
- Whisk in the pineapple tidbits, carrots, potatoes, mushrooms, soy sauce, and tomato sauce. Simmer for another 20 minutes. Stir in the bell peppers and cheese. Serve.
