Ingredients:
- 1 milkfish, cleaned & scales removed
- 10 tbsp white vinegar
- 1 tsp crushed peppercorn
- 1 head garlic, crushed
- ¼ tsp cayenne pepper powder
- ½ tsp salt
- ½ cup cooking oil
Directions:
- Mix the vinegar, cayenne pepper, garlic, salt, and black pepper in a suitable bowl. Slice the fish from the top and open it like a butterfly.
- Place inside a plastic bag and pour in the vinegar mixture. Knead, seal the bag and refrigerate overnight. Set a pan greased with cooking oil over medium heat.
- Sear the fish for 5 minutes per side until golden brown. Serve warm with spicy vinegar.
