Our family loves chicken. But, I’m allergic to it 🙁 My mom likes to cook and bake chicken and makes this creamy chicken pastel recipe a hit for most occasions. For this recipe, one starts by making a simple cream sauce by simmering some milk and butter together until it becomes thick and creamy.

Creamy Chicken Pastel

  • Cooking time: 35-40 minutes

Ingredients:

  • 2 lb. chicken breast, cut into cubes
  • 1 Chicken stock cube
  • 1 Chorizo de Bilbao, sliced, or any dry sausage of your choice
  • 4 hotdogs, sliced
  • 1 potato, cubed
  • 1 carrot, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3/4 cup button mushroom, sliced
  • 15 oz all-purpose cream
  • 1/4 cup soy sauce
  • 1 lime
  • 1 onion chopped
  • 4 cloves garlic, minced
  • 3/4 cup water
  • Salt & ground black pepper, as needed

Directions:

  1. Mix the chicken, soy sauce, plus lime in your large bowl. Set aside and marinate within 30 minutes.
  2. Heat oil in your skillet and sauté onion plus garlic until soften. Add the chorizo and toss within 1 minute.
  3. Add the chicken and sauté until light brown. Pour the water and let it boil. Add the chicken stock cubes, stir well, cover with the lid and cook within 20 minutes.
  4. Add the hotdogs and cook over medium heat until the liquid lessens to half.
  5. Add the potato plus carrot and pour the all-purpose cream. Stir well, cover, and cook within 8 minutes.
  6. Mix in the mushroom plus bell peppers and cook within 3 minutes—season with ground black pepper plus salt before serving. Enjoy!
