Ingredients:

  • 1 ½ lb. chicken, cut into serving parts
  • 1 ½ lb. pork belly cubes
  • 1 garlic, minced
  • 1 onion, thinly sliced
  • 1 cup vinegar
  • ½ c. soy sauce
  • 1 tablespoon vegetable oil
  • 1 cup water
  • 2 bay leaves
  • Salt & pepper to taste

Directions:

  1. Warm the oil in your skillet over medium heat and sauté the garlic until lightly brown and fragrant, about 3 minutes. Add the onions and frequently stir for 2 minutes more.
  2. Add the pork cubes, occasionally stirring until evenly browned, about 10 minutes. Stir in the chicken pieces and cook until browned.
  3. Whisk in the vinegar and boil uncovered, ensuring that you do not stir until after the mixture is boiling.
  4. Stir in the soy sauce, bay leaves, and water. Bring to a boil, cover, and simmer the mixture until the meats are tender and most of the liquid has evaporated.
  5. Add salt and pepper. Serve and enjoy!
