Beef Morcon is one of the tastier Filipino dishes that the whole family can enjoy. This recipe starts with pounded beef steaks and stuffing it with ground pork, carrots, hard-boiled eggs, cheese, and raisins that all add to the amazing flavor. After rolling it up tight like a log and baking or boiling it until done, you have an incredibly scrumptious meal.

You can customize the ingredients for this Filipino feast depending on what you prefer. Some people prefer to opt out of the raisins, while others add pineapples to it.

  • Preparation time: 10 minutes
  • Cooking time: 60 minutes
  • Servings: 6

Ingredients:

  • 2 lb. sirloin steak, thinly sliced
  • 2 beef franks cut in half
  • 4 eggs, boiled, peeled & sliced into wedges
  • 1/2 cup raisins
  • 1 carrot, medium, cut into sticks
  • 1 (14 oz) can of diced tomato
  • 1 cup tomato sauce
  • 3/4 cup water
  • 1 beef cube
  • 1 dill pickle, cut into sticks
  • 1 yellow onion, medium-diced
  • 4 garlic cloves, crushed & minced
  • Salt & ground black pepper, as needed
  • ½ cup all-purpose flour
  • 8 tbsp cooking oil

For the marinade:

  • 3 to 4 tbsp soy sauce
  • ½ tsp garlic powder
  • ¼ tsp ground black pepper

Directions:

  1. Pound using a meat tenderizer the steak to flatten.
  2. Combine the steak and steak marinade ingredients until well coated. Let it sit within 10 minutes.
  3. Slice the steak into 6 x 5″ pieces. Add a slice of beef frank, pickle, carrot, plus egg to one side of the steak.
  4. Roll into a log shape and secure using kitchen twine. Repeat with the rest of the steaks and set them aside.
  5. Heat 5 tbsp of oil in your pan. Dredge the beef morcon in all-purpose flour and remove excess flour. Fry on all sides within 1 minute until it turns light to medium brown. Set aside.
  6. Heat 3 tbsp cooking oil on a clean pan and sauté the garlic plus onion until fragrant. Add the diced tomato, tomato sauce, water, plus beef cube, and stir well. Let it boil.
  7. Add the fried morcon, cover, and simmer within 50 to 60 minutes. Season with salt plus pepper as needed and stir well.
  8. Remove and let it cool before slicing. Top with remaining sauce and serve.
