You can make afritada as spicy or as mild as you like!

Ingredients:

  • 3 tbsp avocado oil
  • 1 medium onion, minced
  • 2 tsp minced garlic
  • 2 lb. chicken thighs, cut into large cubes
  • 2 tsp fish sauce to taste
  • 6 oz tomato paste
  • 2 cups chicken broth
  • 4 bay leaves
  • ½ tsp honey
  • 2 medium white potatoes, cubed
  • 1 large carrot, cubed

Directions:

  1. Heat the avocado oil in your pot over medium heat, and sauté the onion and garlic. Add chicken and fish sauce, and cook both sides of the chicken until brown.
  2. Pour the tomato paste and chicken broth over the chicken. Add the bay leaves and honey, and stir all ingredients together. 
  3. Cover the pot and allow the stew to cook over low heat for 10 minutes. Stir in the potatoes and carrots. Cover and simmer on medium heat within 10 minutes. Serve hot!
